Smash Burger Bowl

Makes 4 servings — great for prep

Ingredients:

  • 4 small russet potatoes

  • 1 large yellow onion

  • 1 tbsp avocado oil

  • 1.25 lb 93% grass fed ground beef

  • optional toppings: pickles, shredded cheese, pickled red onion, sauteed mushrooms

Sauce Ingredients (4 servings):

  • 8 tbsp plain greek yogurt

  • 2 tbsp mayo

  • 4 tbsp pickle juice

  • 6 tbsp ketchup

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

Instructions:

Preheat oven to 425F. Poke holes into potatoes and place in oven for 45-55 minutes or until tender. You can also put these in the crockpot, I believe. While that is cooking (or prep them ahead!), brown ground beef and season as desired. Take beef out of skillet, and add 1 tbsp avocado and thinly sliced onion, sprinkle with pink salt and saute until caramelized and soft. In a small bowl, combine all sauce ingredients and stir well. To serve, cut open one baked potato and fluff with a fork, add 5oz ground beef, top with caramelized onion and any other toppings along with 1/4 of the sauce. Enjoy!

Tip if you need a smaller portion, just do 1/2 of a russet potato and keep the same amount of everything else to get adequat protein
