Cozy Chili

Makes 6-8 servings

Ingredients

  • 2lb grass fed ground beef

  • 1 small yellow onion, diced 

  • 2 bell pepper (red or green), diced

  • 3 garlic cloves, minced (or 1 tbsp minced garlic)

  • 1 tbsp avocado oil

  • 2 tsp cumin

  • dash red pepper flakes (optional)

  • 1 heaping tbsp smoked paprika

  • 1 tbsp garlic powder

  • 1 1/2 tbsp chili powder 

  • 2 tsp pumpkin pie spice (yep! a secret ingredient that is incredible flavor)

  • pink salt and pepper to taste 

  • 1 - 14 oz tomato sauce

  • 1 - 28 oz crushed or diced tomatoes

  • 1 - 14oz can kidney beans

  • 1- 14 oz can pinto or black

  • 1 cup beef bone broth

  • Optional toppings: pickled jalapenos, plain greek yogurt (for sour cream), avocado, shredded cheese, cornbread

Instructions

In a large pot or dutch oven, heat avocado oil and saute onion and bell pepper until soft. Add minced garlic and saute until fragrant. Add ground beef and brown. Add in all seasonings and pink salt and pepper (will add more later if needed). Add broth, tomato sauce, diced tomatoes, and beans. Stir until all well combined and bring to a simmer for 10 min. Bring back down to low, taste and adjust seasonings as needed.
