Caesar Pasta Salad
Makes 4 Servings
Ingredients
8 oz Rotini Pasta (I used the Banza brand for added protein)
2 cups chopped Hearts of Romaine
½ cup shaved parmesan
1-2 cups grilled or rotisserie chicken
Black pepper and garlic powder, to taste
Caesar Dressing:
½ cup plain nonfat Greek yogurt
2 tsp Worcestershire sauce
2 anchovy fillets, mashed into a paste
Pink salt + black pepper (to taste)
2 tsp minced garlic
1 tbsp Dijon mustard
1–2 tbsp lemon juice
1 tbsp olive oil or avocado oil
3–4 tbsp grated parmesan cheese
Instructions:
Cook pasta according to package directions. Drain and let cool completely. In a bowl, whisk together Greek yogurt, Worcestershire, anchovy paste, garlic, Dijon, lemon juice, oil, parmesan, salt, and pepper until smooth. In a large bowl, combine cooled pasta, romaine, and shaved parmesan. Pour dressing over and toss until evenly coated. Taste and adjust lemon, salt, or pepper as needed. Chill for 30–60 minutes or serve immediately. Here are a few good Caesar dressing brands if you don’t want to make the dressing from scratch:
