Spaghetti Squash

Makes 4 servings

Ingredients

  • 1 medium spaghetti squash

  • Olive oil (about 1 tbsp)

  • Seasonings of choice (salt, pepper, Italian seasoning, garlic powder, etc.)

  • 1 lb ground turkey or ground beef

  • 1–1½ cups spaghetti sauce (jarred or homemade)

  • ½ onion, diced

  • 2–3 cloves garlic, minced

  • Parmesan cheese, for topping

Instructions

Preheat oven to 400°F (205°C). Cut spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with salt, pepper, and any seasonings you like. Place cut-side down on a baking sheet and roast for 30-35 minutes, until tender. Let cool slightly, then use a fork to scrape into “noodles.” While the squash roasts, heat a large skillet over medium heat. Add ground turkey or beef and cook until browned, breaking it up as it cooks. Add diced onion and cook 2–3 minutes until softened. Stir in garlic and cook 30–60 seconds until fragrant. Pour in spaghetti sauce and let simmer for 5–10 minutes to let flavors combine. Add the spaghetti squash noodles to the skillet and toss to coat with the meat sauce. Taste and adjust seasoning if needed. Top with parmesan cheese!
