Pumpkin Oat Bars

Makes 9 servings

Ingredients

  • 1 cup rolled oats

  • 1 medium ripe banana, mashed

  • 1/2 cup milk

  • 1 large egg

  • 1/3 cup pumpkin puree

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • cinnamon and pumpkin spice, to taste

  • pinch of salt

  • 2 tbsp honey or maple syrup

  • 2 tbsp chia seeds

  • chocolate chips

Instructions

Preheat oven to 350°F. Lightly grease or line an 8x8-inch baking dish with parchment paper. In a medium bowl, mash the ripe banana with a fork until smooth. Add the milk, egg, pumpkin puree, vanilla extract, and honey (or maple syrup) to the mashed banana. Whisk until well combined. In a separate large bowl, stir together the rolled oats, baking powder, cinnamon, pumpkin spice, chia seeds, and a pinch of salt. Pour the wet mixture into the dry ingredients. Stir until evenly combined. Fold in the chocolate chips. Spread the batter evenly into the prepared baking dish.

Bake for 25–30 minutes, or until the center is set and a toothpick inserted comes out clean. Allow bars to cool in the pan for at least 10–15 minutes. Cut into 9 squares (or 12 smaller pieces, if preferred).
