Ginger Chicken Lime Rice Soup
Makes 4 servings
Ingredients:
1.25lb chicken tenderloins
1 sweet or yellow onion, diced
5 tsp minced garlic
4 tbsp minced ginger
pink salt and pepper
1 tbsp avocado oil
4 cups chicken bone broth
cilantro and lime for toppings/garnish
1 cup white rice, cooked (in rice cooker/according to package directions
Instructions:
In an air fryer or skillet, place chicken tender seasoned with pink salt and pepper and cook until done (do not overcook). Meanwhile, in a pot, add in avocado oil and saute onion and garlic until onions are caramelized and garlic is fragrant, add in ginger at the end. When chicken is done, pull apart in big chunks and add to pot with onions and garlic. slowly stir in bone broth and allow it to break up brown bits on the bottom of the pot. bring to a simmer and allow everything to cook together on medium low for 20 minutes or so. In a rice cooke or on the stove according to package directions, cook the rice. When the rice is done, squeeze in juice of 1/2 lime and chopped cilantro (to taste) and stir to combine. When ready to serve, place 3/4 cup rice at the bottom of a shallow bowl and scoop 1/4 of the soup mixture on top of rice. Squeeze more lime juice and garnish with cilantro.
