Ginger Beef Soup

Makes ~4 servings

Ingredients

  • 1 lb ground beef

  • 1 tbsp fresh ginger, grated (or 1½ tsp ground ginger)

  • 3 cloves garlic, minced

  • 1 medium onion, diced

  • 6 cups beef broth

  • 2 cups carrots, sliced

  • 1 cup dry white rice

  • 1 tbsp oil (avocado or olive oil)

  • Salt & pepper, to taste

  • Optional for spice: red pepper flakes, chili crisp, or sriracha

Instructions

Heat oil in a large pot over medium heat. Add diced onion and sauté for 3–4 minutes until softened. Add garlic and ginger and cook for 30–60 seconds until fragrant. Add ground beef, breaking it up with a spoon. Cook until browned. Season lightly with salt and pepper. Stir in carrots and beef broth. Bring to a gentle boil. Add rice, reduce heat to a simmer, and cover. Cook for 15–20 minutes, until rice is tender. Taste and adjust seasoning. Add red pepper flakes or chili crisp if you want extra heat. Serve warm.
