Egg White Scramble

Makes 1 serving

Ingredients

  • 1 whole egg

  • 1/2 cup liquid egg whites (or about 4 egg whites)

  • 1/2 chicken sausage link, sliced into coins

  • 1/2 bell pepper, diced (any color)

  • 1 handful spinach

  • 1 tsp olive oil or cooking spray

  • Seasonings of choice, to taste

  • 1 tbsp Feta cheese

  • Optional toppings: salsa, avocado slices, shredded cheese

Instructions

Heat a nonstick skillet over medium heat and add olive oil or cooking spray. Cook sausage slices for 2-3 minutes until lightly browned. Stir in diced bell pepper. Cook another 2-3 minutes until softened. Toss in the spinach and cook just until wilted. Whisk egg and egg whites in a bowl, push the sausage and veggies slightly to the side of the pan, and pour eggs into the empty space. Let them set for 30-60 seconds, then gently scramble. Mix eggs, sausage, and veggies together. Top with your toppings of choice!
