Honey Chipotle Chicken Burrito Bowl
Makes 5 servings
Ingredients:
1.25 lb chicken tenderloins
3-4 tbsp adobo sauce (from a can of chipotle in adobo sauce) depending on desired spice level
2 tbsp plain greek yogurt
2 tbsp raw honey
1 cup white rice (should result in 2.5-3 cups cooked)
1 can corn
1 can black beans
2 bell peppers, sliced
1/2 yellow onion, sliced
1 tbsp avocado oil
pink salt and pepper
Optional Toppings — Avocado Ranch (Bolthouse or another brand), sliced avocado, pickled onions
Instructions:
Cut chicken tenderloins into bite size chunks. Place in a small bowl and add in adobo sauce, raw honey, and plain greek yogurt. Mix together well until chicken is coated. In an air fryer, add in chicken in a single layer and cook at 380F for 12 minutes until cooked through and slightly browned on the outside. You are also welcome to do this on a skillet. Meanwhile, cook rice according to directions, warm up corn, and black beans. In a skillet, add in 1 tbsp avocado oil and turn heat to medium. Add in sliced peppers and onions. Season with pink salt and pepper. Saute until tender, soft, and caramelized. To serve, place 1/2 cup rice at bottom of bowl, 4oz chicken, black beans, corn, peppers and onion, and any other desired toppings.
