Burger Bowl

Makes 4 servings

Ingredients:

  • 1.25lb 93% grassfed ground beef

  • 2 large sweet potatoes, cubed

  • Chopped Romaine Lettuce

  • Optional Toppings: pickled red onion, chopped pickles, chopped grape tomatoes, cheese, jalapenos

  • pink salt, pepper, smoked paprika

  • avocado oil

Sauce Ingredients

  • 8 tbsp plain greek yogurt

  • 4 tbsp mayo

  • 4 tbsp pickle juice

  • 4 tbsp ketchup

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

In a skillet, brown ground beef. toss sweet potatoes in a light drizzle of avocado oil, pink salt, pepper, and some smoked paprika. Massage to cover thoroughly. In a air fyer or oven (400F for 20-30 min), cook sweet potatoes until tender and browned. Combine sauce ingredients in a container.

In a bowl, layer the lettuce, ground beef, red onion, pickles, grape tomatoes, and other toppings. Shake up all the sauce ingredients in a small container and pour over your burger bowl. Toss everything together to make sure it's nice and coated. I suggest prepping multiple servings of everything for an easy lunch or dinner prep for the week.

1 serving = 5 oz ground beef, 1 cup roasted sweet potatoes. This is for measurement purposes, feel free to change portions!
